Recipe: Vegan Soljanka Soup

Tomato, paprika soup with leftovers
(Post also available as a German version)

Sometimes you buy more than you really need and ask yourself: what to do with the leftovers?
We found some foods in our fridge and our larder and transformed them into a great meal:
Everybody in the former GDR knew it: Soljanka. A soup originating in Russia.
Traditionally it's made with meat, so we made a vegan version of it.
The result was delicious....

Vegan Yeast Risen Pastry With Pudding

At Easter time I love my vegan yeast-risen pastry. Since years I have been baking it on Easter Sunday

The most important thing about it is, when to eat it.
Because it's  most delicious when it's fresh and it should be eaten at the same day, otherwise it can be put in the fridge.
Because I love this tradition, of baking it, I'm going to tell you my recipe.
It's whole grain and vegan, you will love it, too.

Mushrooms in vegan oat cream sauce

vegan recipe sauce with mushroomsMushrooms are also called the vegans meat. For a good reason! They contain  for example:
  • proteins
  • potassium
  • B-vitamins
  • phosphorus
  • magnesium
  • iron
  • zinc
and, as if that wasn't enough, they are cholesterol free and nearly fat free.

Grandmas Bohemian Dumplings (Knödel)

As every holiday, I was asking myself: What should I cook for lunch?
My vegan easter lunch this year was :
Vegan czech duplings with red cabbage and mushrooms in red wine sauce.
I loved the bar - shaped bohemian dumplings when I was a child... I guess the last time I ate it, was 12 years ago when my grandma cooked it.
So now its time to enjoy it again in a vegan modification.
